They had a slight bitterness—an “edge.” Her mother balanced that bitterness with a sprinkle of sugar on top.\nMcLagan says bitterness has been bred out of modern grapefruit. Now they’re sweet and pink…with no bitterness.\nThat loss inspired her book. “They don’t taste like grapefruit any more,” she says.\nWhat is Bitter?\nMcLagan says that many people confuse bitter with sour.
