For Lou Lambert, that meant at least one semester at his father’s and grandfather’s alma mater, TCU, and a commitment to working hard wherever he ended up. While attending TCU, he discovered that a love of cooking paired well with his willingness to work hard, and those two ingredients opened the doors to fine dining restaurants in New York and San Francisco. Eventually Lou felt pulled back to Texas, where his distinctive style and high quality menus set his restaurants apart.
