Tried again at fermenting. This time cucumbers and a jar of nectarines. I’m pretty sure I’ve got the formula for fermenting down…1 and a half teaspoons of salt per one cup of water. I used the wrong kind of cukes…they got mushy. And the nectarines were too ripe and melted to juice water, stringy fibers, and floating nectarine skins. Smaller cukes and a bit less ripe for the fruit…next experiment will be to ferment Asparagus and a jar of Brussels Sprouts this weekend.
