Ham and Beans in the Instant Pot

1 pound dry brown or white beans

7 cups water

1 ham hock or bone

About 2 cups cubed ham

Salt and pepper to taste

Onion (optional)

Rinse beans, add all ingredients to the instant pot, and pressure for 65 minutes.

Do a quick release.

Note:  If you listen to the coffee club demo, I mis-spoke regarding the amount of water—I mistakenly said 3 cups, it is 7 cups.

Please do not use 3 cups or you may burn your beans.
