I’m your host, Caro Griffin, a mezcal sommelier and traveling bartender.

I’ve spent the last decade traveling around the world and, in that time, I’ve wandered around hundreds of museums, taken tons of tours… and gone to a lot of bars. And honestly, I learned just as much from the bars!

You can learn a lot from the comfort of a bar stool… the vibe of the place, the people who are there, the spirits on the menu… they all tell you something. And the good spirits do, too!

There’s this concept in spirits and wine called terroir — which is used to talk about how the characteristics of a place (the soil, the climate, the topography) affect the final flavors of a drink.

I think all the best spirits have a strong terroir — whether it’s literal, like you can taste the minerals from the soil, or more broadly speaking, like how my favorite Mexican whiskey (yes, that’s a thing!) is made from 100% native corn, which is a food so core to Mexico’s history, cuisine, and culture that it makes total sense we’d make whisky out of it, too.

And, yet, often the best beverages and the coolest stories never make it to the bar where you’re sitting, debating between a couple mezcals you’ve never heard of.

So, Between Drinks is all about the stories behind the spirits—the ones you love, the ones you’re a little intimidated by, and the ones you haven’t heard of yet.

Each episode, we’ll travel somewhere new to dive into a local drink that captures the heart and soul of a place, and the people who pour them.

I’ll be sharing my own adventures, and I’ll also be sitting down with bartenders, distillers, and drink enthusiasts from all over the world, hearing their stories and discovering what makes each drink special. You’ll learn about everything from obscure mezcal in small Oaxacan pueblos to the resurgence of forgotten European liqueurs.

Whether you’re a cocktail lover, a curious traveler, or just someone who enjoys a good story with your drink, this podcast is for you. And trust me, after hearing some of these backstories, you’ll never order a shot of Jose Cuervo again.
