So this morning,
I had a really fun nacho cooking
segment on mass appeal and chickpea mass.
It's there station out there.
We did some fun.
Brisket nachos. Delicious.
I left there
and I picked up some new business cards,
which I'm super excited about with a lot
of totally natural branding to it.
And totally not just is obviously the name
of my upcoming cookbook blog plug.
Plug.
Yeah, it's really exciting right now
because we're planning out book
tour dates that happen
after it comes out on August 25th,
and really
putting a lot of fun details together.
I know I can probably mention this one.
We're going to have a pre-party
at the Hartford Yard Goat Stadium.
I just put the book cover
on the jumbotron, and I create a nacho
specifically that night for the game.
So there's a lot of fun things
that are happening.
Do we have a date on that?
Yes, it is, I believe.
Saturday, August 22nd.
If that is a Saturday,
I'm going to be there.

Because the more people cheering
and supporting on it means so much.
Yeah for sure.
Oh, this is amazing.
Yeah. The nacho nacho rages not rages.
So it's like outrageous.
The book has a very much 80 theme to it.
So when you think back to the 80s
and you hear totally outrageous,
it is totally naturally
just this time around.
I love it,
I love it, and all the things there.
That brisket sounds amazing.

Had a nice horseradish
crema to it as well.
So blend it in some nice horseradish
and Worcestershire sauce and salt.
Yeah, there's 80 different types
of nachos in your book, or 70, 80,
70 original nacho recipes,
which will range from international
to nacho fusion to dessert nachos to
holiday nachos.
I even have an apt birthday nacho,
which is my very special birthday nacho.
When's your birthday?
October 24th, one week before Halloween,
which makes it the best possible
birthday ever.
I actually have a name for that.
It's called Hollow Wirth Day,
so it's two things that are together.
And every year I have a big costume party.
Nice for my birthday. Very cool,
very cool.
Can't beat it.
Happy birthday, Halloween guy. Oh, yeah.
Big time Halloween.
I have bins in my basement.
Still being a program director at a camp.
Being a third grade teacher bins a lot.
So name and often I probably have it.

I got the Bugs Bunny from Space Jam.

the community that are doing great things.
And, Alex, you're doing

You're a good friend.
You want to talk about your visit
a couple of months ago or last month you
visit, to which one?
Sorry, I'm like,
which visit are we talking about now?
I'm sorry.
When you came to my school.
Oh my God. Sorry. That visit.
See, when you say visit, though, that's
when you're everywhere.
And I'm like,
sorry, I should have been more specific.
I'm sorry.
So it was March 22nd.
You went to woke elementary school
right now? No.
But when you said third graders earlier,
I was actually going to chime in
with that.
But we went into the Halloween direction,
so all good.
What I will say, that visit was so amazing
when I walked in, it was just
this little third grade fan club
coming with cards and excitement
and happiness.
And to me, that is what life is all about
right there. Yep.
And they led me to your classroom,
which then all of a sudden it's amplified
even more. Yep.
And I don't think you were in the room
at the time when I walked in.
No, I was chatting. Yep.
You were down the hall, but.
So I was there and I was like, wow, this.
I just, like, sat
right in the front and started.
It was great.
One of the most amazing things
in in a previous life of mine,
I was a high school,
a large group facilitator,
so I felt very comfortable being
in front of the classroom in that way.
Nice.
But it was obviously no,
it showed cause it was third
graders versus high school students,
and these third graders
were just so sweet and so kind.
And it felt amazing.
That energy. Yeah. That youthful energy.
Yeah, it was great.
You were definitely a celebrity.
They they were like.
They were like, he's coming. He's famous.
The Nacho King. They still talk about it.
It was amazing.
They had me signing their folders,
notebooks,
and I was like, I can't sign that.
Like,
you're gonna get in trouble with your.
A lot of parents knew you.
Oh, good. Knew of you?
Yep. And it was great.
But I love that.

for that experience.
Because, I mean, honestly,
I went through all of the cards
because they each made me a card. Yeah.
And I, I, I still like, look at them
and it's just such a
this like, if you're having a bad day,
look at the cards.

And that's the thing.
A lot of their cards
said, you know, thank you so much
for seeing us on Nacho Day. And
this is of course, amazing.
So, you know, I might end up being there
for the last day.
Who knows? Yeah.

How does that happen?
Yeah,
I actually was doing a nacho demonstration
at the kitchen company in North Haven,
and one of their representatives
was there and said, hey,
we really like what you did with this.
Would you like to do a keynote speech?
And I said, yeah, absolutely.
Because again,
I for ten years worked in a nonprofit
before I took on food
as a main occupation, let's say.
And I was always up at the front
giving talks and facilitating.
And it's very second nature to me.
I love it.
I was the commencement speaker last night
at the Parent Leadership
Training Institute.
It was in West Hartford, but we had
families from Avon, Farmington all over.
And I went on about 5 to 10 minutes.
Oh, wow.
And I got a lot of compliments. So.
It feels good to be in front
and have everyone's attention on you.
And people come up to you and say,
good job.
I want to get involved with friends.
I love what you're doing.
I love your message.
Can I tell you something fun as well
is that I just recently, as of like
two weeks ago, officiated a wedding
the first time as well.
And I also had a nacho analogy
to love as well.
I'm there and honestly, everyone came up
to me afterwards and said what an amazing,
you know, talk that was.
And I felt really good.
Now at that wedding,
they actually had a tattoo station,
and there was 15
preset tattoos that you could pick from.
So the tattoo artist came up to me.
There was two of them.
And by the way,
both of their names were Alex as well.
So it's like, this gets crazy.
So many Alex's.
But he says, hey,
we really loved what you did.
Are you going to get one of our tattoos?
And I said, the only way I will ever get
another tattoo is if it means something.
So you'd have to, like,
have, like, a tortilla chip.
And he said, I'm sorry,
we don't have that one,
but I will consider
drawing it for you on the spot.
So he came up to me later and he said,
what do you think about this?
It was on his computer screen.
And I said, well, looks like
I'm getting a nacho tattoo right now.
And I did.
Come on.

This is amazing.
I'm not that big.

Well, got one when I was I think like 19
and it was a tribal gotcha tattoo
which clearly means nothing.
And it was like something
at the time that it was nothing.
It meant nothing. Right.
And so my entire life,
I walked around with this thing
and I thought, wow, I really didn't
put much thought into this.
And, you know,
that's the talk of, like, a 19 year old.
Yeah, at the time.
And for this one,
it actually meant something.
It commemorated, you know, officiating
a waiting for the first time.
And then also this era of Nacho
that I'm in in their life right now,
which is definitely meaningful.
Yeah, I love it.
I said yes.
Say yes. Yes. The tattoo.
Say yes. You ever got one?
You know, getting up there.
My brother has a sleeve, my sister has
and my mom has, and my wife has one.
And it's like your third graders
thought I was your brother.
You know, he said
you must be a good looking dude, though.
I mean, we're both tall, right?
I mean, you're six two, six, two and a
half, and you're six four, six, four.
They had us back to back. Yeah.
The kids were like, who's taller?
Yeah, yeah, they
they were such a fun group. Oh.
So great.

as as we can start off

So that's your foundation,

kind of cursive knowledge
from a previous life.

The cheese.
Now I would say in terms
of how you're looping all the letters,
the other the cheese is binding
as is the cursive.
Very nice I like it,
I like it topping wise.
I think cursive is very presentational.
And is that kind of wow factor experience
that people look for with nachos as well.
So if you're writing a letter in cursive,
that to me is also wow factor.

No, friend, is that
if you can find something you're
passionate about, something that brings
you joy, then you can likely relate it
to anything in life, I believe.

And I think nachos became a vehicle
for me to pursue a lot of dreams.
And it opened a lot of doors to me,
and I'm
so grateful to Ignacio Nacho Anaya,
creator of the original Nacho, in 1943,
for bringing this into the world.
And that's not very recent, you know,
that's yeah, that's not too long ago.
If you think about 1923, not very far in
terms of like the grand scheme of history,
and even right now
there, people love nachos.
Yeah, it brings people together.
So who's who's the originator?
Because we did a read aloud
to prep for your visit.
Was it nachos? Nachos.
The guy's name was.
Yeah. Cartoon book.
Yeah. Yeah, I have that book.
I actually know the author of that.
And so his full name is Ignacio, so.
That's right. Ignacio.
Their nickname becomes Nacho. Gotcha.
His last name was in.
He actually created this nacho in Piedras
Negras, Mexico, at a place
called the Victory Club. Yep.
Okay.
Did it for three military wives
that came in.
One of their names was Mammy or Mami.
Mami or Mammy finally.
And they said, hey,
we really want to try something
we've never had in our entire life.
And he went into the kitchen, scrambled
because there was, you know, whatever
kind of ingredients
he had put the three, the chip, the cheese
and the pino together brought him out.
And they loved them.
Oh, yeah.
And so he named them nachos especially.
I love it.

that make you go to your job?
Three keys.
I would say creativity.
That's certainly a key.
Thinking outside of the box, obviously.
I think consistency is always a key.
The more you do something,
the better you're going to get at it.
And then I also think
my last key could be resilient.
Even if someone says no
or many people say no,
you find a different way
to get past the door.
Either it's going through a window,
going around the back side.
However, you can do it because I think
in life there are gatekeepers
and they prevent a lot of people
from getting sometimes places
that they should, maybe rightfully so, be.
And I think it's a point of
just figuring out a way to get around
people sometimes.
And it's sometimes it's not that clear
path of like a to be.
You got to see exactly okay.
And you figure it out.
I'm a big zig zag,
you know, kind of over small things.
I go right to the big thing.
Okay. And that's great for me, you know.
Yeah. It's amazing you're on.
A lot of you are in mass appeal.
You're with Scott and Kara.
You're with Erica? Yeah.
So you're in with everyone.
How'd you.
How do you get to that door? Back door.
Zig zag. Which way?
Oh, I would say I got it because it
not Joe's.
So I was doing local nacho
showcases at first.
And that led to just in general showcases.
So whether all of a sudden
it turned into holiday showcases.
So Mother's Day, pathogen, ally.
So it really opened a lot of doors to me
in that way.
But a really special moment that I had
with Great Day Connecticut was when I had
a conversation with the producer, Kate,
who she's amazing.
I asked her and said,
hey, would you be okay if I tried
to do a natural cooking segment?
And this was years back now, and she said,
give it a shot.
See how it goes.
You know what?
That was kind of getting past
this one thing that I needed to kind of
go with.
And the first time I did it,
it went great.
And then I got asked to do it again
and again.
And suddenly I'm using those recipes
now to write a cookbook.
So life has a funny way that's
amazing of kind of bringing you
where you need to be.
When's your next holiday?
When you reappear on the news.
Nice.
And you
got some red, white and blue nachos.
So I might do a regular local showcase
for that.
So sometimes I'll get goods
from or sweets or burgers
or hot dogs
from Google businesses. Gotcha.
So essentially helping local businesses
as well from those things
you do it typically that happens on Fox
61 a lot now with Erica. Yep.
So we'll do it
a couple of weeks before the holiday.
So it gives people
ideas of what they could get
or support
before the holiday itself is awesome.
So you're a foodie hotspot and travel.
Yeah. Yeah.
We we play a game so.
And you like you said, you got events
every day, visits every day.
Let's talk about your events.
Your first one, your last one.
Your best one.
Your worst one.
It's called first last best worst. Wow.
I needed some prep on this one.
I think there's some like,
how about when you said
before, like the visit, I was like,
oh God, which one?
You know, because there's so
every day is completely different for me.
There is no I mean, you have repetitive
nature to what you do.
Yep. Me,
I am constantly waking up and like,
where am I going to
thank God for Google Calendar?
Because I really have
to stay on top of that.
If not, things could go very wrong.
So if it was a first event,
I will
also say this
to I planned events like my entire life,
and whether it was just for friends
or I was always the one who was throwing
the parties,
I was always the one who was inviting
all the friends over to the either
the apartment at the time or to my house.
Now I just I'm a natural connector
for people and bringing large groups
of people together.
Very natural to me.
So I it must have been a birthday party.
Okay, okay.
Most recent one,
I mean, it would have to be something
to do with nachos.
So what about the Hartford taste?
Was that recent? Oh my gosh.
So actually yeah.
Hartford Taste
I just had that one where I was a judge
for the Nacho Cookoff
and also the MC as well.
And prior to that
it was the taste of Sono in South.
North.
Yeah,
I saw that of those events helped benefit
Connecticut Food Share which is amazing.
Yeah.
So always supporting
supporting Connecticut Food Share.
And I had a great time
at both of those events.
And here's the thing I don't
I don't probably have the worst
that I can say right now, but I,
I think to me, even if it was the worst,
I look at any kind of failure or mistake
always welcome.
It's great
to actually make mistakes and mess up
because it's going to teach you
how to do it the right way.
Yeah,
and I'm never going to beat myself up
over something that was super bad.
You know,
I just think there's so many other things
that we could worry about in life.
And most of the time if something
goes wrong, I just don't engage it.
And no one really knows either.
Yeah. Just go with the flow.
You know?
You made the mistake. Yeah, exactly.
And if you could play,
if you can fake it til you make it,
then you're great.
Like if you're giving
a speech or something and you're like,
missed the line.
No one knows you miss the line.
They know they're not going to know.
They're not gonna know.
They're gonna know.
No, no, no, no they will.
And I don't think in that case they will
because it's really just your reaction.
Right. That can show that. Right.
So either you're proactive
or you're reactive.
Go with proactive.
And how was the Cook-Off?
I saw sono.
So South Norwalk,
that's pretty far away. Yeah.
Oh, actually I was just at Georgetown
Day as well, which was on Sunday.
They had a chilly cookoff.
Honestly, I'm telling you, friend,
every day of my life is food centric
or food adjacent,
and I have to go to the gym
because if I don't, this
this could end off really bad,
you know, and I luckily, you're tall.
I'm tall.
You know, we could probably eat more
than other people can,
and it'll probably blend.
But if, if if I don't go to the gym
for a gap of time, it becomes noticeable.
Agreed.
This is this is a part of this job.
As much as I love this part,
you've got to really stay on top of that.
Good.
No more teacher at us, teacher Marotta.
So bears barbecue
one at the Hartford taste.
Right? Jamie McDonald.
He did such a great job.
There was a rule though
I would that wasn't followed
in terms of only bringing two ingredients
extra based off of he.
He had quite a few,
so I think it was only natural
his Nacho was going to win.
I would also say Puerto
Vallarta had a great nacho as well,
but they limited themselves to
I think next year the rules needs change
so that it's
whatever you want to bring it.
And I think that would probably make it
the add brisket.
Me some sort of meat.
Yeah he did
he you know that's what they're known for.
Smokehouse.
And he did.
It's delicious barbecue sauce on it.
And well my brisket nacho
this morning as well had a nice like smoky
barbecue sauce.
And I've been doing a job now
with this company called Ninth and Prime.
So I do every Monday
I do a meat video for them.
And every week
now I'm cooking a new something.

The bass peppers are the Peruvian yellow
pepper and the Peruvian Ponca pepper.
So they're both blanch.
They were not really after the spice.
We're after the essence of the pepper.
So can I say in my mind, when I heard a
nacho was going to come out,
I was thinking there would be like
an Amarillo sauce on it, like the yellow.
Well, this is there.
So it's the
the sauce that you're seeing is based off
the Amarillo and the pancake pop.
The pepper is like a dehydrated pepper,
like, smoky, semi-sweet note. So
yeah, let's get a pic.

for that and my niece is for that as well.

I feel I still look the same. Yeah.

but they went from kindergarten
the senior year totally different.
And here I am still, you know looking good
like like you never age a day like.

I think I love holidays, though.

How was season 11?
Season
11 of Below Deck was pretty amazing.
We went to Grenada
and it was my first time ever
leaving the country,
so this is a pretty magical experience
at this point because I get to go back
and watch it like a home video
on Hulu or Peacock, wherever it streams.
And see, the first time we left
or I left the country, which is amazing.
We were on The Saint David,
which was a 250ft Italian superyacht.
We celebrated Christmas and New Year's
Eve on the on the show and on the boat.
Clearly it was so much fun.
We got to visit a.
Authentic chocolate factory
called Triangle
try Island Chocolate Factory.
So they actually made chocolate
for us that we ended off eating
and they put it in our desserts.
We we really had some great meals.
We, they put on the feast of the Seven
Fishes
for us on the boat,
for the Christmas part of the night.
They had a Christmas tree.
And then for New Year's Eve the next night
they lit up, you know, fireworks.
We all got dressed up. It was amazing.
Geez, that's so cool.
Honestly, it's one of those core
experiences that you'll always remember.
And funny enough, after that aired,
I was also a featured
table on Hell's Kitchen.
So we got to sit front row
at the big circle table
and watch all the drama go down.
Season 23, episode six Hell on Wheels,
of what was going on with Gordon Ramsay.
And funny enough, I actually met him
the night before that as well
at a taping of Watch What Happens
Live with Andy Cohen, that we were there
because my friend Barbie,
who was on season 11, was being featured
on the show that day.
He's a lot of a lot of details,
but I'm telling you, life has a funny way
of how you end up places and who you know.
And so you're a reality TV star.
I don't I wouldn't, I would not say that,
but I would say I am a nacho,
a nacho aficionados and nachos
got you there.
Nachos, because I, you know,
we actually also had on the show
they made octopus nacho spawning.
So those were delicious.
And it was very Grenada.
You know, something
I'll always remember for sure.
I may someday go back to it.
I don't know, like I, I think
the possibilities someday again are there.
We'll see. See what happens.

kind of bringing things into your life.

And at that point, to me, I just want to
have as much fun as possible.
I don't want to have any conflict

I think, oh, there you have another threat
of the show that is all about that.
I say, if you're ever going
to be a charter guest for Below Deck,
go on and have fun, because the world
doesn't need more jerks like gotcha.
So the drama is in the cooking
and the chefs and the service
drama could happen
between people that work together.
So, you know, rightfully so.
And then also to, you know, if,
if certain people are
in a relationship with each other,
that comes out
like, as could be a problem
or it could be a good thing.
So, yeah, I mean,
I'm sure there's someone hooking up
with someone and reality TV.
Sure. Yeah.
And I think with that said,
we came out from that show
and I think we had a very positive image
when we walked away from it.
I think people were like,
we really we really like how you
were genuinely having a good time
with each other,
because sometimes you'll get people
that are
rude to the staff or mean or
highly demanding, just jerks.
And I never I worked in the hospitality
industry for about 20 plus years,
and I would never do that to somebody
who worked in hospitality, I know.

Were you ever a server or bartender?
Yeah, once bartending a wedding.
It was amazing.
I want to I want to go back, I liked it.
I think I think that
it should be mandatory that you serve
or wait tables or bartend
as you grow up, because it really teaches
you how to interact with people correctly
and to read people
and to understand how they feel.
And I, you know, again,
going back to where people could be rude
sometimes I think if you were a server,
you probably want to act like that.

And I'm like, yep, gas station

So AMP picked up the songs and they,
you know, they they go
as far as like math or,

So I feel like it's always fun to hear.
That's awesome. People hear that.
But yeah we had a great time.
And I will just add to the whole music
band piece of my life is that
I would probably have still continued
on doing this,
but it's very difficult and very hard
to navigate band politics sometimes.
So if there's five people in a band,
you're not just dealing
with those five people,
you're also dealing with their boyfriends
or girlfriends or their spouses,
and that becomes a bigger project
to take on.
And as the lead singer and lyricist
for the band, I was very much the leader,
and it was one of the toughest
jobs ever to navigate band politics
could only imagine,
could only imagine you ever in a band?
No, no.
My last guest, Ben, is in a band.
He's going to let me sing.
I'm high as a guy, and I just might.
Yes, I'm gonna sing that.

I got some other news that I auditioned.

that inspired you?
I ask every podcast guest, well,
I think I had a lot of great teachers,
one that
my mom will probably say Mrs.
McCarthy was the teacher for me
because she taught me organization
and she taught me, you know, just kind of
how to stay on time with things.
But I will say one another.
One of my teachers
that I really think about is Mrs.
Scores.
And this was in the New England
school system.
She was just really amazing.
I feel like she was a teacher that
because at the time I think we were in
maybe eighth grade or seventh grade,
and then she followed us
over to high school as well.
So it was like she grew up with us,
and I think she always talked to us
like real people.
And I guess that would be harder
to do with third graders.
But I always felt she understood us
and I thought that was pretty amazing.

that would stick out the most.

so much about the different cultures

what we know here in the United States
is so much different
than the rest of the world,
and it's the more
we can expand our horizons and expand
what we know about different cultures
and flavors and tastes.
Which is why a place like Karakorum
so awesome.
You know, it's checks
a lot of boxes of learning,
trying, tasting, drinking
all of these new things
that you may have never had before.
I encourage you go out and explore.
